You’re going to think me a little bit bonkers probably.

Am I the only one who has an issue with popping a ‘bliss ball’ in my mouth?

Please tell me it isn’t so.

I’m afraid these lemon, cashew & coconut bites don’t come with guaranteed life epiphanies or tingles in your extremities.

Sorry about that.

But they are pretty damn good and quick to make.

And perfect for elevensies or those pesky 3pm cravings.

With chia seeds, dates, raw cashews and coconut they are full of healthy goodness – if I have a batch in the kitchen I’ll throw a couple into a morning smoothie for a nice bit of sweetness.

Don’t skip on rolling the bites in the lemon zest and coconut on the lemon zest  – it’s worth a little bit of effort.

And if you have time to soak the cashews overnight then do so – it makes them easier to digest but it’s no biggie.

Sometimes I do.

These are perfect to have on hand for a healthy mid day snack or add to a smoothie for a nice bit of sweetness. Great for a lunch box surprise too.

Ingredients

  • 1 cup pitted dates (approx 130g)
  • 3 tbsp warm water
  • 1 cup raw cashews (approx 140g)
  • 1 cup shredded coconut (approx 95g)
  • 1 tbsp chia seeds (optional)
  • Juice of 2 lemons

For rolling!

  • ¼ cup coconut
  • zest of 2 lemons

Instructions

  1. Soak the pitted dates in the warm water to soften up for a bit whilst you measure everything else directly into a food processor.
  2. Add the dates and whizz everything up until it forms a ball. You want a little texture not pulp.
  3. Test for taste – add more lemon juice if necessary {the more the better for me}.
  4. Tip into a bowl and have a bowl of water nearby to wet your hands. Have a sheet of greaseproof paper nearby too.
  5. Mix the coconut and zest together and place in a bowl.
  6. Make a ball of the mixture using a tablespoon, roll in the coconut and zest and place on the greaseproof sheet.
  7. You’ll need to wet your hands a few times or you’ll get incredibly sticky and messy.
  8. Makes approx 24. Store in an airtight container.

Notes

Soak cashews overnight in 1 cup of filtered water if you have the time or inclination.
